Meat

Parker got up to go to the bathroom at 2 am, and it woke me up. When I tried to get back into bed and sleep, I kept thinking about meat. (i'm weird..this I already know.)

I need a lesson on how to buy meat, which meat to buy, and what to do with it once I get home. I feel like all we eat is chicken and ground beef. I want to experiment with pork, and roasts, and even turkey. Any suggestions or ideas? I want easy meals, but I want to broaden our meat horizons.

I just made my first pork roast last Sunday! I felt the same way that you did. I was getting so sick of just eating chicken and ground beef. I feel like Rick and I have a Mexican theme going in our dinners. We have tacos, taco salads, and chicken fajitas regularly.

I don't have the recipe with me at work for the pork roast I made, but I can email it to you when I get home tonight. My mom also sent me a recipe for a delicious maple & brown sugar ham. :)

Bethany I have a great and really easy recepie for pork chops. They come out really tender and taste great. I'll get it to you later.

I love pork chops on the grill - it's so easy. Or breading them with cracker crumbs and frying them on the stove - fattening but unbelievably good with mashed potatoes and gravy! Roast is a favorite too b/c you just pop it in the oven. Don't have time to go into details, but I haven't ever made my own turkey yet. I think this may be the year though!

Bethany - Lance and I LOVE the flavored pork tenderloins by Hormal. Trader Joe's also has a delicious tenderloin that is their brand. The peppercorn are really tasty. You can get them just about anywhere. And, they are as low in fat as chicken! I always make some mashed potatoes to go w/ it and some yummy vegetables. They are great grilled or baked and super easy to prepare. There is also teriyaki, bbq and several more flavors if you prefer. If you like fish, Salmon is very easy to prepare. (i can't imagine you liking fish and being related to sharon, i think she would disown you!) HAHA!

I have a good recipe for rump roast too... wrap the roast in foil and add 1 package of dried onion soup mix, a can of cream of mushroom soup and some onions and bake on 350 while @ church on Sunday morning, come home and have a delicious meal already cooked and it makes the house smell heavenly! (you can also add veg to the mix, it's so tender and juicy and the gravy is scrumptious!)

Or that turkey meat with egg noodles and creamcheese and sourcream..that was yummy too!

ok...this has nothing to do with food. I just wanted to let you know that Chris and I are online now. For our adoption. I put it up on my blog if you want to look. I am really excited about it.

I agree with Angel. Pork Chops are easy and VERY good!!!

OK here's the recepie for pork chops these are the best I have ever had and simple.
beat an egg and coat the chops in the egg and then in bread crumbs (any kind you want) put in a baking dish with a pat of butter on top of each. dissolve one beef bouillon cube in the microwave in one cup of hot water. Pour in baking dish around the chops but not on them. Baked covered with foil at 350 degrees for two hours. I have never had to go longer than an hour so check them at an hour and then the last 1/2 hour remove the foil so they brown.
You can also use BBQ sauce, onions or tomato sauce if you want.
They are tender and moist and very good.

With Thanksgiving and Christmas coming up here's another one:
Cranberry Salad
1 lb. Cranberries
1Box strawberry or raspberry jello
2 c sugar
1 orange- peel and all
1 c drained crushed pineapple
1 envelope of plain gelatin
1/4 to 1 c pecans-optional

Grind or chop in a blender washed cranberries and the orange. Put the misture in a bowl and add the drained pineapple. Add two cups of sugar to the cranberry mixture. Stir and let sit while you make the jello.
Make the jello in a spearate bowl with the two cups of HOT boiling water and add the gelatin.
Add the jello to the cranberry misture and pour in a decorative bowl and refrigerate overnight to set.
Enjoy! Nice because you can make it the day before.
